Fudge Icing

Old Fashioned Fudge Icing This is a very old recipe, and it takes a little practice to get it just right. Don't be discouraged if you don't get it on your first attempt. The weather does play a role in this too, just like candy making. If it is a hot humid day, it will take a little longer to set up. You will get better with each time. ~~Ingredients ~~ 2 cups sugar 1/2 cup milk 1/2 cup butter (stick) 1/2 cup cocoa 1/4 tsp salt 1 tsp. vanilla extract ~~Instructions ~~ **Cooking the fudge icing In a medium, heavy pot mix the sugar, cocoa, and salt with a whisk til combine. Then use a wooden spoon. Gradually stir in milk. Add the butter. Bring to a full rapid boil that can't be stirred down. Boil exactly 3 minutes, 45 seconds, stirring constantly. Add the vanilla extract last because the flavor of vanilla is diminished the longer it cooks. Then cool no more than 5 minutes. **Beating the fudge icing. Remove the pan from the heat and either with a hand-held mixer or a stand mixe

Apple Cinnamon Jelly This jelly is so yummy that I try to keep some on hand all the time!❤️ Ingredients: - 4 cups apple juice (I prefer 100% apple juice from Walmart) - 1/2 cup red hot candies (available at Walmart) - 1 package powdered pectin (1.75 oz or 6 tablespoons, I use 7 tablespoons for a better set) - 4 1/2 cups sugar Directions: 1. In a large pot, combine apple juice, cinnamon candies, and powdered pectin. 2. Bring the mixture to a full rolling boil, stirring constantly until the candies are completely dissolved. 3. Add sugar and return to a full boil. 4. Boil hard for 2 minutes, stirring constantly. 5. While preparing the jelly, preheat the water bath canner by heating water. 6. To prevent cloudiness, add a splash of vinegar or 1/8 teaspoon of cream of tartar to the water in the canner. 7. Keep the jars in hot water until ready to fill. 8. When ready, empty the water from the jars and fill with jelly, leaving 1/4 inch headspace. 9. Wipe the rim with a damp paper towel, then p
