Congo Bars.  2 3/4 cup Flour.  1/2 teaspoon Salt.  2 1/4 Cup Brown Sugar.  1 cup Nut Meats.  2 1/2 teaspoons Baking Powder.  2/3 cup Shortening.  3 eggs.  1 6oz pkg. Chocolate Chips.  Melt Shortening, add brown sugar, eggs and beat well . Add sifted dry ingredients, nuts, and chocolate chips.  Bake in a 10 1/2 x 15 1/2 pan.  Bake at 350F for 25 minutes. Lemon Squares. 1 cup Flour.  1/4 cup Powdered Sugar.  1/2 cup Butter.  Blend throughly and press into a 8x8 pan. Bake at 350F 20-25 minutes. 2 eggs, beaten.  1/2 teaspoon Baking Powder.  2 tablespoons Fresh Lemon Juice.  1 cup White Sugar.  1/4 teaspoon Salt.  Beat eggs ect. And pour over baked crust. Cornflakes Coolied 1 cup soft Butter.  1 reaspoon Vanilla.  1 teaspoon Cream of Tartar 2 cups Cornflakes, not crushed.  1/2 cup chopped Pecans.  1 cup Sugar.  1 1/2 cups Flour.  1 teaspoon Salt.  Cream butter and sugar.add vanilla and dry ingredients. Christmas Baklava with walnuts  1/2 pound chopped pecans 1/2 pound chopped walnuts 2-3 tbsp. ground cinnamon 1 pound package of Phyllo dough 1-1/2 cups butter, melted 2-1/2 cups honey 1 tsp. vanilla 1 tsp. grated lemon zest INSTRUCTIONS 1 ) Mix nuts together in a large bowl and toss with the ground cinnamon. Set aside. 2 ) Butter a 9×13 inch baking dish. Place 2 sheets of phyllo in the bottom of prepared dish. Brush generously with melted butter. 3 ) Sprinkle 2-3 tablespoons of nut mixture on top. Repeat layers until all the nuts, butter, and phyllo are used. 4 ) End with about 6 layers of phyllo on the top. If you still have some butter left, brush it over the top layer. 5 ) Using a very sharp knife, cut through all layers of the baklava. Cut 3-4 sliced length-wise. 6 ) Then make diagonal cuts to make diamond shapes. 7 ) Bake in a heated 350-degree oven for about 45 minutes, until golden and crisp. 8 ) While baklava is baking, heat honey in a saucepan until close to boiling. Southern Buttermilk Biscuits  2 cups all-purpose flour 1 tablespoon baking powder 1/4 teaspoon baking soda 1 teaspoon sugar 1/2 teaspoon salt 6 tablespoons unsalted butter, cold and cubed 3/4 cup buttermilk, cold Instructions: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper. In a large bowl, combine flour, baking powder, baking soda, sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Make a well in the center and pour in the buttermilk. Stir just until the dough comes together; it will be sticky. Turn the dough out onto a floured surface and gently knead just a few times. Do not over-knead. Roll the dough out to about 1 inch thick and cut with a biscuit cutter. Place biscuits on the prepared baking sheet. For soft sides, place them touching each other; for crisp sides, place them apart. Biscuit  Bake at 370 degrees 20 mins in oven (you want a slow bake) 2 1/2 cups self rising flour  1 tbsp sugar 1 cup cold salted butter broken into cubes  1 egg 1/2cup  buttermilk  1/2 cup half and half  2 tbsp butter flavored crisco or vegetable shortening if unable to find butter flavored - [ ] Add all dry ingredients in bowl and sift/mix, add buttered flavored crisco and incorporate in the flour - [ ] Add cold butter and cut into the flour - [ ] Add wet ingredients and mix  - [ ] Goal is marshmallow texture (add equal amounts of buttermilk and  half and half if needed to get the texture) - [ ] Place back in fridge and store overnight - [ ] Next day use scooper or roll out and use biscuit cutter, don't twist. Use very minimal flour or none if possible when rolling out.  - [ ] Place biscuits in cookie sheet and place in preheated 370 degree oven. CHEDDAR CHEESE QUICK BREAD 2 cups all-purpose flour 4 teaspoon baking powder 1 tablespoon sugar 1 1/2 teaspoon garlic powder 1/2 teaspoon salt 1 1/2 cups shredded cheddar I prefer sharp 1 cup milk 1 large egg beaten 2 tablespoon butter melted  INSTRUCTIONS  Preheat oven to 350° Grease/spray a loaf pan. In a large mixing bowl, whisk together flour, baking powder, sugar, garlic powder and salt. Stir in shredded cheese. Set aside. In a separate bowl, whisk together milk, egg & butter. Add liquid ingredients to bowl of dry ingredients. Stir until just combined. Do not overmix. Spoon/pour into loaf pan. Bake for 45-50 minutes. Top should be a golden brown. Cool on wire rack. APPLE PECAN CAKE WITH CARAMEL GLAZE INGREDIENTS: 1½ cups of cooking oil 2 cups sugar 4 Eggs 3 cups of flour 1 tsp baking soda ½ tsp cinnamon 1 tsp salt 2 tsps vanilla 3½ cups Granny Smith apples (approximately 3-4 apples), peeled and chopped 1 cup of chopped pecans Caramel Glaze ¾ cups butter (1½ sticks) 1 cup light brown sugar ¼ cup milk 1 tsp vanilla INSTRUCTIONS: Preheat oven to 325° In a large mixing bowl, add oil, sugar and eggs, mix until nice and creamy. In a medium mixing bowl, whisk together flour, baking soda, cinnamon and salt. Add to large bowl. Mix well. Add vanilla, mix well. Stir in apples and pecans. Pour into generously greased and floured tube pan (you can use two loaf pans in place of a tube pan). Bake at 325° for approximately 1 hour. Check using a tooth pick at about 50 minutes, and if it comes out clean, then your cake is done. If using the loaf pans, make sure to check it at about 50 minutes as well. Jello Divinity Candy 🍬✨ Ingredients: 3 cups of white sugar 3/4 cup of water 2/3 cup of light corn syrup 2 room temperature egg whites 1 packet (3 oz) of Jello gelatin (any flavor) 1 cup of optional chopped nuts 1 teaspoon of vanilla extract Directions: In a medium saucepan, combine sugar, water, and corn syrup. Stir over medium heat until the sugar dissolves. Use a candy thermometer to monitor the temperature, heating the mixture to 260°F (hard-ball stage), which should take about 10-15 minutes. Avoid stirring during this process. In a large bowl, beat the egg whites until they form stiff peaks. Once the syrup reaches 260°F, remove from heat. Gradually and carefully pour the hot syrup into the beaten egg whites, continuously beating at high speed. Be cautious of the hot syrup. Beat the mixture until it thickens and becomes glossy, holding its shape, for approximately 5-7 minutes. Chocolate Mint Crazy Cake Ingredients: 1 ½ cups all-purpose flour 1 cup white sugar ¼ cup unsweetened cocoa powder 1 teaspoon baking soda ½ teaspoon salt 1 teaspoon white vinegar 1 teaspoon pure vanilla extract 5 tablespoons vegetable oil 1 cup water 2 tablespoons mint extract or finely chopped fresh mint Directions: Preheat your oven to 350°F (175°C). In an ungreased 8-inch square baking pan, sift together flour, sugar, cocoa, baking soda, and salt. Make three depressions in the dry ingredients – two small and one larger. Pour vinegar in one small depression, vanilla extract in the other, and vegetable oil in the larger one. Over this, pour water and mint extract or fresh mint and mix until smooth. Cook the breakfast sausage in a skillet over medium heat until browned. Add the diced onion and bell pepper, cooking until softened. In a large bowl, whisk together eggs, milk, salt, and pepper. In a greased 9x13 inch baking dish, layer the tater tots in a single layer. Spread the cooked sausage, onion, and bell pepper mixture over the tater tots. Cheeseburger Pizza Pizza dough (store-bought or homemade), enough for one large pizza 1/2 pound ground beef 1/2 cup pizza sauce 2 cups shredded mozzarella cheese 1/2 cup sliced red onion 1/2 cup cherry tomatoes, halved 1/4 cup pickles, sliced 1 teaspoon mustard 1 teaspoon ketchup Salt and pepper to taste Directions: Preheat oven to 475°F (245°C). Roll out the pizza dough on a floured surface and place it on a pizza stone or baking sheet. In a skillet, cook ground beef over medium heat until browned. Season with salt and pepper. Spread pizza sauce over the dough. Top with half of the shredded cheese. Add cooked ground beef, red onions, cherry tomatoes, and pickles on top of the cheese. Christmas Tree Cake Dip Ingredients: 1 box Little Debbie Christmas Tree Cakes (5 cakes) 8 oz cream cheese, softened 1/2 cup butter, softened 3 cups powdered sugar 1 tsp vanilla extract 2 tbsp milk Green food coloring (optional) Sprinkles and mini candies for decoration Directions: In a large bowl, blend the softened cream cheese and butter until smooth. Gradually add the powdered sugar and mix until creamy. Crush the Little Debbie Christmas Tree Cakes into small pieces and fold them into the cream cheese mixture. Add vanilla extract and milk. Mix well. If desired, add a few drops of green food coloring for a festive look. Refrigerate the dip for at least 1 hour. Before serving, top with sprinkles and mini candies for decoration. Pancakes or waffles

Pancakes or Waffles. Here is my recipe for Pancakes, Nothing fancy to them really but my kids all want me to make pancakes for them when we visit. 2 cups plain all-purpose Flour 1/4 cup Sugar (more or less to taste) 1 1/2 teaspoon Baking Powder 1 teaspoon Salt 1 teaspoon Cinnamon (optional)( or other spices you like) Mix together well then add the following 1 egg 1/4 cup oil ( a good sized quick pour from the bottle works) 1-1/2 to 2 cups milk, (as much needed to make your batter as thick as you like it) Mix all together well. A few small lumps are ok. Heat your skillet over medium heat. Once it's warmed up, pour about a 1/2 cup of the batter into the skillet and let it settle in without using the cup or spoon to flatten it. Once the edges have a dry look to them and bubbles have risen to the surface, carefull turn over and cook the other side for about the same amount of time. Check to see if underside is browned. Remove to a serving plate and smear some butter on top. Serve with

Classic Italian Panettone Ingredients: 4 cups all-purpose flour 1/2 cup sugar 2 tsp instant yeast 1/2 tsp salt 2/3 cup warm milk 1/2 cup unsalted butter, melted 2 large eggs 1/2 cup raisins 1/2 cup candied orange peel Zest of 1 lemon Zest of 1 orange 1 tsp vanilla extract Directions: In a large bowl, combine flour, sugar, yeast, and salt. In another bowl, mix warm milk, melted butter, and eggs. Gradually add the milk mixture to the flour mixture, kneading until a soft dough forms. Mix in raisins, candied orange peel, lemon zest, orange zest, and vanilla. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour. Punch down dough and let it rise again for 30 minutes. Place dough into a panettone mold and let it rise until it doubles in size. Preheat oven to 350°F (175°C). It is a great way to feed hungry kids just before payday  American Classic Beef Goulash Ingredients: 1 lb ground beef 2 cups uncooked elbow macaroni 1 large onion, chopped 2 cloves garlic, minced 1 can (15 oz) diced tomatoes, undrained 1 can (8 oz) tomato sauce 2 cups beef broth 1 1/2 tsp Italian seasoning 1/2 tsp paprika Salt and pepper to taste 1 cup shredded cheddar cheese 2 tbsp olive oil Directions: In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until softened. Increase heat to medium-high and add ground beef. Cook until browned. Drain excess fat. Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil. Add uncooked macaroni to the skillet, stirring well. Spiced Gingerbread Crazy Cake 1 1/2 cups all-purpose flour 1 cup granulated sugar 1/4 cup unsweetened cocoa powder 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1/2 tsp ginger 1/4 tsp cloves 1 tsp white vinegar 1 tsp pure vanilla extract 5 tbsp vegetable oil 1 cup water Directions: Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, salt, cinnamon, ginger, and cloves. Make three wells in the dry ingredients. Pour vinegar in one well, vanilla in the second, and vegetable oil in the third. Pour water over all and stir until smooth. Chicken Vesuvio Ingredients: 4 chicken thighs, bone-in and skin-on 4 chicken drumsticks 1/2 cup all-purpose flour 1/4 cup olive oil 4 large Yukon Gold potatoes, quartered 1 cup frozen peas 3 garlic cloves, minced 1/2 cup dry white wine 1 cup chicken broth 2 tablespoons fresh lemon juice 1 tablespoon chopped fresh parsley Salt and pepper to taste Directions: Preheat oven to 375°F (190°C). Season chicken with salt and pepper, then dredge in flour. In a large skillet, heat olive oil over medium heat. Add chicken and brown on both sides. Transfer chicken to a baking dish. In the same skillet, add potatoes and cook until golden. Add garlic to the skillet and sauté briefly. Stir in wine and broth, scraping up any browned bits. Pour the mixture over the chicken.   Easy Salami Cream Cheese Roll-Ups Ingredients: 20 thin slices of salami 8 oz cream cheese, softened 1/4 cup chopped green onions 1/4 cup roasted red peppers, finely chopped 1/4 teaspoon garlic powder Directions: Lay out the salami slices on a flat surface. In a bowl, mix cream cheese, green onions, roasted red peppers, and garlic powder until well combined. Spread a thin layer of the cream cheese mixture over each salami slice.
