Goulash
I admit, once I married I never wanted to eat Goulash again. Mom did serve it a couple of times, after i married. But I never did tell her how much I didn't like it. It is a great way to feed hungry kids just before payday
American Classic Beef Goulash
Ingredients:
1 lb ground beef
2 cups uncooked elbow macaroni
1 large onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
2 cups beef broth
1 1/2 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
2 tbsp olive oil
Directions:
In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until softened.
Increase heat to medium-high and add ground beef. Cook until browned. Drain excess fat.
Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
Add uncooked macaroni to the skillet, stirring well. Reduce heat to low, cover, and simmer for 20 minutes or until macaroni is tender.
Remove from heat, top with shredded cheddar cheese. Cover until cheese is melted.
