Chocolate Mint Crazy Cake
Ingredients:
1 ½ cups all-purpose flour
1 cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon white vinegar
1 teaspoon pure vanilla extract
5 tablespoons vegetable oil
1 cup water
2 tablespoons mint extract or finely chopped fresh mint
Directions:
Preheat your oven to 350°F (175°C).
In an ungreased 8-inch square baking pan, sift together flour, sugar, cocoa, baking soda, and salt.
Make three depressions in the dry ingredients – two small and one larger. Pour vinegar in one small depression, vanilla extract in the other, and vegetable oil in the larger one.
Over this, pour water and mint extract or fresh mint and mix until smooth.
Bake in the oven for 35 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool. Frost with your favorite icing or enjoy as is.
