Jello Divinity Candy 🍬✨

Ingredients:
3 cups of white sugar
3/4 cup of water
2/3 cup of light corn syrup
2 room temperature egg whites
1 packet (3 oz) of Jello gelatin (any flavor)
1 cup of optional chopped nuts
1 teaspoon of vanilla extract
Directions:
In a medium saucepan, combine sugar, water, and corn syrup. Stir over medium heat until the sugar dissolves.
Use a candy thermometer to monitor the temperature, heating the mixture to 260°F (hard-ball stage), which should take about 10-15 minutes. Avoid stirring during this process.
In a large bowl, beat the egg whites until they form stiff peaks.
Once the syrup reaches 260°F, remove from heat.
Gradually and carefully pour the hot syrup into the beaten egg whites, continuously beating at high speed. Be cautious of the hot syrup.
Beat the mixture until it thickens and becomes glossy, holding its shape, for approximately 5-7 minutes.
Gently fold in the Jello gelatin, vanilla extract, and nuts (if using) until evenly incorporated.
Drop the mixture by spoonfuls onto waxed or parchment paper-lined baking sheets using two spoons or a cookie scoop.
Allow the candies to cool and set at room temperature for about 2-3 hours or until they are firm.
