Ingredients:
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp ground nutmeg
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 tsp vanilla extract
1/2 cup eggnog
1/4 cup spiced rum (optional)
Eggnog buttercream frosting (store-bought or homemade)
Ground nutmeg for garnish
Directions:
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground nutmeg. Set aside.
In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the eggnog and spiced rum (if using), beginning and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Once the cupcakes are completely cooled, frost them with eggnog buttercream frosting and sprinkle with a pinch of ground nutmeg for a festive touch.
