Clam Cataplana 🍲

Ingredients:
🐚 2 lbs (about 1 kg) fresh clams, cleaned
🌱 1/2 lb (225g) vegan sausage
🧅 1 large onion, finely chopped
🧄 3 cloves garlic, minced
🌶️ 1 red bell pepper, thinly sliced
🌶️ 1 yellow bell pepper, thinly sliced
🍅 1 can (14 oz/400g) diced tomatoes
🌱 1/4 cup (60ml) olive oil
🌶️ 1 teaspoon smoked paprika
🧂 Salt and black pepper to taste
Instructions:
Clean the Clams: Soak clams in cold water for about 1 hour to remove any sand.
Scrub the shells with a brush and discard any open or damaged ones.
Sauté vegan Sausage: In a cataplana or large skillet, heat olive oil over medium heat.
Add vegan sausage or chorizo substitute slices and sauté until they release their flavorful oils.
Add Aromatics: Add chopped onions and minced garlic to the vegan sausage. Sauté until onions are translucent.
Bell Peppers and Tomatoes: Stir in the sliced red and yellow bell peppers. Cook until they start to soften. Add the diced tomatoes and cook for an additional 5 minutes.
Sprinkle smoked paprika, salt, and black pepper. Stir well.
Clams and Steam: Place the cleaned clams on top of the vegetable mixture.
Cover the cataplana or skillet and let the clams steam for 10-12 minutes until they open. Discard any unopened clams.
