Cinnamon Roll Cookies
For Cookies:
3 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 c. (2sticks) butter, softened
1 c. granulated sugar
1 large egg
1 Tbsp. milk
1 tsp. vanilla extract
For Filling:
2 Tbsp. melted butter
1/4 c. packed brown sugar
2 tsp. ground cinnamon
For Glaze:
1 1/4 c. powdered sugar
2 Tbsp. milk
Directions:
For Cookies:
1. Preheat oven to 350°F. Line two cookie sheets with parchment paper. In large bowl, whisk flour, baking powder, and salt.
2. Beat together sugar and butter until fluffy. Add egg, milk, and vanilla. Mix until combined, then add flour mixture gradually until combined. Divide dough in half.
3. On floured surface, roll each piece of dough into a 9"x10" rectangle about 1/4" thick.
For Filling:
4. In small bowl, combine brown sugar and cinnamon. Brush rectangles with melted butter. Sprinkle sugar mixture over each. Tightly roll each rectangle into a tight log. Refrigerate 30-45 minutes.
5. Slice into 1/2" thick slices and place onto prepared cookie sheets about 1" apart. Bake until lightly golden, 12-14 minutes.
For Glaze:
6. In small bowl, combine powdered sugar and milk. Drizzle over cookies. Let sit until glaze is hardened.
This dough can be frozen and used at a later date.
