Lemon & Honey Gummy Bears

Ingredients:
- 1 cup water
- 1/2 cup fresh lemon juice (about 3-4 lemons)
- Zest of 1 lemon
- 1/4 cup honey
- 2 tablespoons gelatin powder
- Optional: 1/2 teaspoon vanilla extract

Instructions:

1. In a small saucepan, combine the water, fresh lemon juice, lemon zest, and honey. Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling.

2. Gradually sprinkle the gelatin powder over the liquid, whisking constantly to prevent lumps. Continue whisking until the gelatin is fully dissolved and the mixture is smooth.

3. If using, stir in the vanilla extract.

4. Remove the saucepan from the heat and let the mixture cool slightly.

5. Using a dropper or spoon, carefully fill the silicone gummy bear molds with the lemon-honey mixture.

6. Refrigerate the molds for at least 2 hours, or until the gummy bears are firm and set.

7. Once set, remove the gummy bears from the molds and store them in an airtight container in the refrigerator for up to 2 weeks.
