Homemade Gumdrops

Ingredients:
- 2 1/2 cups granulated sugar, divided
- 1 1/2 cups unsweetened applesauce
- 2 packages (6 ounces each) flavored Jello (any flavor)
- 2 envelopes (1/4 ounce each) unflavored gelatin
- 1 teaspoon lemon juice
- 1/2 teaspoon lemon extract (optional)
- Additional sugar for coating

Instructions:

1. In a medium saucepan, combine 2 cups of granulated sugar, applesauce, flavored Jello, unflavored gelatin, lemon juice, and lemon extract (if using).

2. Place the saucepan over medium heat and stir the mixture constantly until the sugar and gelatin dissolve completely.

3. Continue to cook, stirring frequently, for about 20-25 minutes. The mixture should thicken and start to pull away from the sides of the pan.

4. Lightly grease a square or rectangular dish (about 8x8 inches) and pour the mixture into the dish. Spread it evenly using a spatula.

5. Let the mixture cool at room temperature for about 2-3 hours or until it is firm to the touch.

6. Once set, sprinkle the remaining 1/2 cup of sugar on a clean surface. Turn the gumdrop mixture out onto the sugared surface.

7. Use a sharp knife or cookie cutters to cut the gumdrops into your desired shapes. Toss the cut gumdrops in additional sugar to coat them evenly.

8. Place the sugared gumdrops on a parchment-lined baking sheet and allow them to dry at room temperature for 24-48 hours, turning them occasionally to ensure even drying.

9. Store the gumdrops in an airtight container at room temperature.

These homemade gumdrops are chewy, fruity, and perfect for sharing or snacking!
