Crumbl Sugar Cookies with Sweet Almond Icing
Cherish Cuisine
Servings: 12 cookies | Prep Time: 15 minutes | Cook Time: 15 minutes
Ingredients
For the Sugar Cookies:
1 cup salted butter
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
1/2 tsp almond extract
3 cups all-purpose flour
2 tsp baking powder
For the Sweet Almond Icing:
1/2 cup salted butter, softened
3 cups powdered sugar
1 tsp almond extract
1-3 tbsp milk
Neon pink food coloring (optional)
Instructions
Preheat your oven to 350°F (175°C).
Make the Cookie Dough:
Cream the butter and sugar together until light and fluffy.
Scrape the sides and add the eggs, vanilla extract, and almond extract. Mix until combined.
Scrape again and add the flour and baking powder. Mix until fully combined.
Scoop out 1/4 cup of dough and roll it into a ball. Repeat with the remaining dough.
Flatten each dough ball by pressing the bottom of a drinking glass or measuring cup down on the center. Leave space between each cookie as they will spread.
Bake for 9-11 minutes, or until the centers puff up and are no longer glossy.
Let the cookies cool on the sheet.
Make the Icing:
Cream the butter until smooth.
Gradually add the powdered sugar, almond extract, and milk until you have a smooth, creamy frosting.
Optionally, add neon pink food coloring.
Frost the slightly warm cookies with the icing (this gives them a smooth, glossy look).
Chill the frosted cookies in the fridge until ready to serve.
