Small batch yeast rolls

 This recipe makes 4 nice size dinner rolls that are fluffy and delicious.  These only have one rise in the pan which saves time over a 

Mini Batch Homemade Dinner Rolls

1/4 C. warm milk
3/4 tsp. yeast
1 T. sugar
1 egg, room temp. and beaten
1-1 1/4 C. all purpose flour
1/2 tsp. salt
1 T. melted butter

In a mixing bowl add the milk and yeast and let sit for 5 minutes.  Stir in the remaining ingredients, starting with 1 C. of the flour adding more if needed to form a soft dough.  Turn out onto a lightly floured surface and knead for 1 minute.  Divide the dough into 4 portions and roll into balls.  Place them in a lightly buttered 6" round pan.  Cover and let rise for 35 minutes.  Bake in a 350 degree oven for 18-20 minutes, until lightly browned.  Brush with melted butter if desired before serving.
