Small Batch Homemade Dinner Rolls

Anybody else have snow in the forecast over the weekend?  I'm not ready for it just yet but looks like we will be getting some so I'll keep things warm while baking up Christmas loaves to put in the freezer for gifts.  I usually keep homemade dinner rolls in the freezer but I was out and needed something easy and fairly quick to go with supper the other day, so I whipped this small batch up.  This recipe makes 4 nice size dinner rolls that are fluffy and delicious.  These only have one rise in the pan which saves time over a second rise method.

As many of you that have followed me for a long time know, my family always had bread in some form or fashion when it came mealtime.  Even loaf bread if nothing else, but we had bread.  Mama would make yeast rolls for special occasions but otherwise we had store bought heat n' serve dinner rolls.   I'll never forget one night Mama was late getting supper on the table, she had been ironing all day and time got away from her.  I will never understand why she had to iron everything, and I do mean everything including bed sheets, but she did.  Me, I own an ironing board and an iron but haven't use either in well over 20 years.  Anyway, she had made meatloaf and put the rolls in the oven with the meatloaf.  I guess she had planned to put them in later when the meatloaf was almost done but put them in at the same time as the meatloaf.  I guess you can figure out the rest of the story, those rolls turned into black bricks.  She was beside herself when she pulled them smoking in the pan out and threw them in the sink.  Daddy never said a word, he got up from the table, grabbed the loaf of bread off the counter and set it down to butter us all a piece of bread.

Mini Batch Homemade Dinner Rolls

1/4 C. warm milk
3/4 tsp. yeast
1 T. sugar
1 egg, room temp. and beaten
1-1 1/4 C. all purpose flour
1/2 tsp. salt
1 T. melted butter

In a mixing bowl add the milk and yeast and let sit for 5 minutes.  Stir in the remaining ingredients, starting with 1 C. of the flour adding more if needed to form a soft dough.  Turn out onto a lightly floured surface and knead for 1 minute.  Divide the dough into 4 portions and roll into balls.  Place them in a lightly buttered 6" round pan.  Cover and let rise for 35 minutes.  Bake in a 350 degree oven for 18-20 minutes, until lightly browned.  Brush with melted butter if desired before serving.
