✤ Seasoning for Chicken:
- 290g chicken breast
- 1 tablespoon minced garlic
- 2 tablespoons orange juice
- 3g (1 tablespoon) salt
- 0.5 tablespoon black pepper

✤ Batter:
- 50g (5 tablespoons) rice flour
- 25g (2.5 tablespoons) cornstarch
- 25g (2.5 tablespoons) all-purpose flour
- 90ml water

✤ Sauce:
- 0.5 teaspoon ginger powder (optional)
- 1 teaspoon chili powder
- 50g brown sugar (or white sugar)
- 1 tablespoon honey
- 50ml (8 tablespoons) orange juice
- 2 tablespoons soy sauce
- 4 tablespoons vinegar

✤ Starch Water:
- 1.5 tablespoons cornstarch powder (potato starch can be used as well)
- 2 tablespoons water

Instructions:

1. Cut the chicken breast into bite-sized pieces.
2. In a bowl, combine the minced garlic, orange juice, salt, and black pepper. Mix well.
3. Add the chicken pieces to the bowl and coat them evenly with the seasoning mixture. Set aside to marinate for 15-20 minutes.
4. In a separate bowl, prepare the batter by mixing rice flour, cornstarch, all-purpose flour, and water until you have a smooth consistency.
5. Heat oil in a deep frying pan or wok.
6. Take each marinated chicken piece and dip it into the batter, ensuring it is fully coated.
7. Carefully place the battered chicken into the hot oil and fry until golden brown and crispy. Remove and drain on a paper towel.
8. In another saucepan, combine ginger powder (if using), chili powder, brown sugar, honey, orange juice, soy sauce, and vinegar. Cook over medium heat, stirring continuously, until the sauce thickens and becomes glossy.
9. In a small bowl, mix cornstarch powder and water to create the starch water.
10. Add the starch water to the sauce and stir well until the sauce thickens further.
11. Add the fried chicken to the sauce and toss to coat evenly.
12. Serve the crispy orange chicken hot with steamed rice or your preferred side dish.
