Classic Potato Salad

🥔🥗 Classic American Potato Salad 🥔🥗

⏰ Cooking time: 15 minutes (potatoes) + 10 minutes (eggs)
🍽️ Servings: 6 servings

📝 Ingredients:
▶️ 3 pounds potatoes 🥔
▶️ 2 tbsp apple cider vinegar 🍎
▶️ 6 large eggs 🥚
▶️ 1 cup apple, peeled and diced 🍏
▶️ 1/3 cup red onion, thinly sliced 🧅
▶️ 2 stalks celery 🌿
▶️ 1 tbsp celery seeds 🌱
▶️ 1/4 cup fresh chives 🌿
▶️ 1/4 cup fresh dill 🌿
▶️ 1/2 cup mayonnaise 🥪
▶️ 2 tbsp lemon juice 🍋
▶️ 1/2 cup sour cream 🍶
▶️ 2 tbsp Dijon mustard 🍯
▶️ 1/2 tsp salt, plus more to taste 🧂
▶️ 1/2 tsp pepper, plus more to taste 🌶️
▶️ 1 cup sweet pickles, chopped, with juice or sweet pickle relish 🥒
▶️ 1/4 tsp Paprika, for garnish 🌶️

👨‍🍳 Instructions:
1️⃣ Quarter the potatoes and add them to a large pot. Fill the pot with water, covering the potatoes by about two inches. Add about two teaspoons of salt to the water. Place the pot over medium-high heat and bring to a boil. Reduce to a simmer and cook until the potatoes are fork-tender, about 10-15 minutes, depending on their size.

2️⃣ To hard-boil the eggs, place them in a medium pot and submerge them in water, covering them by about an inch. Add a teaspoon of salt and vinegar to the water, then bring it to a boil. Turn off the burner, cover the pot, and leave it for ten minutes. Drain the water and fill the pot with cold water to cool the eggs down.

3️⃣ Once the potatoes are fork-tender, drain the water from the pot and transfer the potatoes back to the empty pot or a large bowl. Drizzle them with apple cider vinegar and toss gently. You may also rinse the potatoes with cold water after draining to cool them down and stop further cooking.

4️⃣ Slice the red onion thinly and chop into shorter pieces. Place them in a small bowl, drizzle lemon juice over them, toss gently, and set aside. This step will "de-flame" the onion and reduce its bite.

5️⃣ Chop the dill and chives, slice the celery stalks, peel and chop the apple, peel and chop the hard-boiled eggs, and chop enough pickles to fill a measuring cup. You can also use a cup of sweet relish as an alternative.

6️⃣ In a medium bowl, add mayonnaise, sour cream, Dijon mustard, and celery seeds. Mix well, then add the chopped pickles and their juice. Mix again until well combined, and set aside.

7️⃣ Pour the dressing over the potatoes and toss gently. Add the onion, apple, celery, dill, chives, and eggs, and mix gently. Sprinkle with paprika before serving.
