Mississippi Mud Potatoes
Ingredients:
• 4 large russet potatoes, scrubbed and dried
• 1/4 cup unsalted butter, melted
• 1/4 cup barbecue sauce
• 1/4 cup sour cream
• 1/4 cup shredded cheddar cheese
• 2 slices bacon, cooked and crumbled
• 2 green onions, chopped
• Salt and black pepper to taste
Directions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Pierce each potato several times with a fork and place them on the prepared baking sheet.
3. Bake the potatoes in the preheated oven for 50-60 minutes, or until they are fork-tender.
4. Remove the potatoes from the oven and let them cool slightly.
5. Once the potatoes are cool enough to handle, slice each one in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin layer of potato inside the skin.
6. Mash the potato flesh in the mixing bowl and add melted butter, barbecue sauce, sour cream, shredded cheddar cheese, crumbled bacon, and chopped green onions. Season with salt and black pepper to taste.
7. Mix until all the ingredients are well combined.
8. Spoon the potato mixture back into the potato skins and place them back on the baking sheet.
9. Bake the stuffed potatoes in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
10. Serve the Mississippi Mud Potatoes hot, garnished with extra green onions if desired.
