Rhubarb Cookies
Add a tangy twist to your cookie jar with these Refreshing Rhubarb Cookies! 🍪💚
Ingredients:
- 1 1/2 cups chopped rhubarb
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped nuts or white chocolate chips for added texture
Directions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. Gently fold in the chopped rhubarb (and optional chopped nuts or white chocolate chips) until evenly distributed throughout the dough.
7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
9. Allow the rhubarb cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
