Ingredients: 1 bag of crushed nacho-flavored tortilla chips 2 cups shredded chicken (rotisserie works great) 2 cups shredded cheese (extra cheese optional) 1 can cream of chicken soup 1 can diced tomatoes with green chilies 1/2 cup sour cream 1/2 cup milk 1/2 package of taco seasoning mix (adjust to taste) Instructions: Preheat the oven to 350°F. Pecan Pie Muffins Ingredients: 1 cup packed light brown sugar ½ cup all-purpose flour 2 cups chopped pecans 2/3 cup butter, softened 2 eggs, beaten Instructions: Preheat oven to 350 degrees F. Grease mini or regular muffin cups generously. In a medium bowl, stir together brown sugar, flour, and pecans. In a separate bowl, beat the butter and eggs together. Stir in dry ingredients just until combined. Spoon batter into muffin cups about 2/3 full. Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular size muffins. Mexican Chicken Pinwheels Ingredients ( Servings: 36 pieces ) 2 chicken breasts boneless skinless, finely shredded ¾ cup mayonnaise 2 green onions thinly sliced 2 tablespoons dried minced onion 1 teaspoon garlic salt 3 tablespoons light brown sugar packed ½ cup thinly sliced red seedless grapes ⅓ cup sliced almonds Salt and pepper to taste 4 burrito sized tortillas How To Make Mexican Chicken Pinwheels Mix together the mayonnaise and chicken in a large bowl. Make brownies in muffin pans.  They are all crispy outside and chewy inside. Then there is no fighting over the corner pieces lol I Use 2 boxes of brownie mix to make 24 cupcake brownies. Add an extra egg. Spray the pans very well with nonstick spray and they'll pop right out using the tip of a butter knife. Bake at 350 for 20 minutes. Old Fashioned Fudge Icing This is a very old recipe, and it takes a little practice to get it just right. Don't be discouraged if you don't get it on your first attempt. The weather does play a role in this too, just like candy making. If it is a hot humid day, it will take a little longer to set up. You will get better with each time. ~~Ingredients ~~ 2 cups sugar 1/2 cup milk 1/2 cup butter (stick) 1/2 cup cocoa 1/4 tsp salt 1 tsp. vanilla extract ~~Instructions ~~ **Cooking the fudge icing In a medium, heavy pot mix the sugar, cocoa, and salt with a whisk til combine. Then use a wooden spoon. Gradually stir in milk. Add the butter. Bring to a full rapid boil that can't be stirred down. Boil exactly 3 minutes, 45 seconds, stirring constantly. Add the vanilla extract last because the flavor of vanilla is diminished the longer it cooks. Then cool no more than 5 minutes. **Beating the fudge icing. Remove the pan from the heat and either with a hand-held mixer or a stand mixe

Refreshing Cucumber Lemonade Ingredients: - 2 large cucumbers, peeled and chopped - 1 cup freshly squeezed lemon juice (about 4-6 lemons) - 1/2 cup honey or simple syrup - 4 cups cold water - Ice cubes - Lemon slices and cucumber slices, for garnish - Fresh mint leaves, for garnish (optional) Instructions: 1. In a blender, combine the chopped cucumbers and 1 cup of cold water. Blend until smooth. 2. Strain the cucumber mixture through a fine mesh sieve into a large pitcher, pressing down to extract as much liquid as possible. Discard the solids. 3. Add the freshly squeezed lemon juice and honey or simple syrup to the pitcher. Stir well until the honey or syrup is fully dissolved. 4. Add the remaining 3 cups of cold water to the pitcher and stir to combine. 5. Taste and adjust sweetness if necessary, adding more honey or syrup if desired. 6. Refrigerate the cucumber lemonade for at least 1 hour to chill and allow the flavors to meld. 7. Serve over ice cubes, garnished with lemon slices,

Lemon & Honey Gummy Bears Ingredients: - 1 cup water - 1/2 cup fresh lemon juice (about 3-4 lemons) - Zest of 1 lemon - 1/4 cup honey - 2 tablespoons gelatin powder - Optional: 1/2 teaspoon vanilla extract Instructions: 1. In a small saucepan, combine the water, fresh lemon juice, lemon zest, and honey. Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling. 2. Gradually sprinkle the gelatin powder over the liquid, whisking constantly to prevent lumps. Continue whisking until the gelatin is fully dissolved and the mixture is smooth. 3. If using, stir in the vanilla extract. 4. Remove the saucepan from the heat and let the mixture cool slightly. 5. GRILLED CHEESE AND TOMATO SOUP CASSEROLE 3 OZ. CREAM cheese 1 1/2 t. Dried basil 12 slices Italian or sourdough bread,               1/2 inch thick 6 slices mozzarella cheese 6 T. Butter softened 1/2 cup tomato paste 1 garlic clove, minced 1/4 t. Salt 1 3/4 cup milk 2 eggs 1 cup shredded Italian blend cheese 1.  Preheat oven to 350.  In a small bowl mix cream cheese and 1 t. basil, until blended, spread onto 6 bread slices.  Top with mozzarella cheese and remaining bread.  Spread outsides of sandwiches with butter.  Arrange in a 9x13 inch baking dish.   2.  In a small sauce pan combine tomato paste, garlic, salt and remaining basil, cook and stir over medium heat for 1 minute.  Gradually whisk in milk, and bring to a boil.  Reduce heat; simmer for 4-5 minutes, or until thickened, stirring frequently.  Remove from heat. 3.  Whisk eggs in a large bowl, gradually adding 1/3 of the milk mixture.  Stir in re!aiming milk, and pour over sandwiches.  Sprinkle cheese blend in top. 4.  Bake unco
