Christmas Jam

Christmas Jam

Ingredients:
3 cups fresh cranberries
1 orange (peeled and chopped)
2 cups strawberries (frozen or fresh, chopped)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
5 cups granulated sugar
1 (3 oz) packet liquid pectin
1/2 cup water

Directions:
Prepare the Fruit: In a large pot, combine cranberries, orange, strawberries, cinnamon, and cloves. Add water and bring to a boil over medium heat, stirring frequently.
Cook the Fruit: Allow the fruit mixture to cook for about 10 minutes, until the cranberries pop and the strawberries soften. Stir occasionally to avoid sticking.
Add Sugar and Pectin: Add the sugar to the fruit mixture, stirring well until fully dissolved. Return the mixture to a rolling boil. Once boiling, stir in the liquid pectin. Continue boiling for 1-2 minutes, stirring constantly.
Check Consistency: Remove the pot from the heat and allow the jam to cool slightly. Test for jam consistency by placing a small spoonful on a cold plate. If it sets, it's ready. If it remains too liquid, return to the heat and cook for another minute.
Jar the Jam: Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims clean and seal with sterilized lids. Process in a boiling water bath for 10 minutes to ensure the jars are sealed properly.
Cool and Store: Remove the jars from the water bath and let cool. Store in a cool, dark place, and refrigerate any jars that didn't seal.
