🍋 Homemade Creamy Lemon Ice Cream – Summer in a Scoop! ☀️🍦

Ingredients:
 • 2 cups cold whole milk
 • ½ cup fresh lemon juice
 • ½ cup sugar (adjust to your taste)
 • 2 tablespoons cornstarch
 • Zest of 1 lemon (optional but super fresh)
 • 1 cup heavy whipping cream (cold)


How to make it:
 1. In a saucepan, mix the sugar, cornstarch, and milk while it's still cold.
 2. Place it over medium heat and stir constantly until it thickens and starts bubbling. It should look like a light pudding.
 3. Take it off the heat and let it cool down completely.
 4. Meanwhile, whip the cold heavy cream in a bowl using a hand mixer until it forms soft peaks (like whipped cream).
 5. Once your lemon-milk mix is cool, add the lemon juice and zest to it. Mix well.
 6. Gently fold in the whipped cream – don't overmix, just enough to combine and stay fluffy.
 7. Pour the mixture into a container, cover it, and freeze for at least 6 hours.
 8. Scoop and enjoy this refreshing, creamy lemon treat! 🍋🍨


Tip:
You can stir it every couple of hours for a smoother texture, but even if you don't – it's still delicious!
